Abstract
Agri-food terminology, as it is intended to meet the needs of optimal communication among specialists but also to foster the understanding of concepts involving the lives of every citizen, faces a series of "challenges", due to osmosis, continues between terms of different Fields of specialist knowledge and words that sink their roots in the social and cultural history of a people. A lexicon that is enriched and transformed thanks to the contact with dialects, foreigners, and loans in an increasingly rapid evolutionary process due to the influence of cultural, economic and political events, often of contingent nature.
